Foxtail Millet Kheer

Ingredients
- Ghee – 1 tsp
- Cardamom – 1/2 tsp
- Foxtail Millet – 1/2 cup
- Water – 2cups
- Milk – 1 Itr
- Jaggery – 150 g
- Rose Water – 1 tsp
- Cashews
- Pistachios
- Almonds

Instruction
- Take a pressure cooker and add ghee, cardamom powder and millet. Roast them 3-4 minutes until they become slightly brown.
- Add water, close the lid and let it cook on medium high for 1 whistle. Turn off the gas and let the pressure release on its own.
- In a separate pan add jaggery powder and 1 cup water. Give it a slight boil.
- Now add milk to the cooked millet and let the mixture cook on low heat till it thickens. Keep this mixture aside for 5 minutes.
- Stir in the jaggery mixture and rose water. Taste and adjust for sweetness.
- Garnish with cashew, pistachios and almonds.
- Your Kheer is ready to serve.
