Foxtail Millet Kheer

Ingredients

  • Ghee – 1 tsp
  • Cardamom – 1/2 tsp
  • Foxtail Millet – 1/2 cup
  • Water – 2cups
  • Milk – 1 Itr
  • Jaggery – 150 g
  • Rose Water – 1 tsp
  • Cashews
  • Pistachios
  • Almonds

Instruction

  1. Take a pressure cooker and add ghee, cardamom powder and millet. Roast them 3-4 minutes until they become slightly brown.
  2. Add water, close the lid and let it cook on medium high for 1 whistle. Turn off the gas and let the pressure release on its own.
  3. In a separate pan add jaggery powder and 1 cup water. Give it a slight boil.
  4. Now add milk to the cooked millet and let the mixture cook on low heat till it thickens. Keep this mixture aside for 5 minutes.
  5. Stir in the jaggery mixture and rose water. Taste and adjust for sweetness.
  6. Garnish with cashew, pistachios and almonds.
  7. Your Kheer is ready to serve.
