Foxtail Millet Rice

Ingredients

  • Foxtail Millet – 1 cup
  • Mustard seeds – 1 tsp
  • White urad dal – 1 tsp
  • Raw peanuts – 1 tbsp
  • Carrot – 1/4 cup, chopped
  • Curry leaves – 1 sprig
  • Ginger – 1 inch grated
  • Green chillies – 2 chopped
  • Turmeric Powder – 1 tsp
  • Lemon juice – 2 tbsp
  • Salt to taste
  • Oil – 1 tbsp
  • Coriander Leaves

Instruction

  1. In a pressure cooker add foxtail millet and 1/2 cup of water. Cook on medium flame for 3 whistles.
  2. Heat oil in a pan and add mustard seeds, urad dal and peanuts. Saute until golden brown
  3. Add the curry leaves, ginger, green chillies, turmeric powder and carrots and stir for a few seconds.
  4. Once the carrot are softened, add the cooked foxtail millet, sprinkle some salt and stir nicely until the millet soften.
  5. Steam the rice for 2-3 minutes and then squeeze in the lemon juice and give a quick stir.
  6. Garnish it with coriander and your rice are ready to serve.
